Rice noodle salad with tofu and peanut sauce
Rinse the noodles in cold water as soon as they are cooked: they stop cooking and no longer stick in a lump.

Ingredients
- 120 gRice noodles
- 250 gTofu
- 100 gCarrots
- 100 gRed cabbage
- 30 gPeanut butter
- 1 pieceLimes
- 20 mlSoy sauce
- 10 gFresh coriander
Method
- Cook the noodles according to the packet, then rinse in cold water and drain.
- Cut the tofu into cubes and brown in a dry non-stick pan for 6 minutes.
- Thin the peanut butter with the soy sauce, lime juice and 3 tablespoons of warm water.
- Toss the noodles with the finely shredded carrot and red cabbage, the sauce and the tofu. Scatter with coriander.
