Light potato, ham and egg salad
The fromage frais and mustard dressing replaces mayonnaise, and keeps better in the fridge until the next day.

Ingredients
- 400 gPotatoes
- 120 gCooked ham
- 2 pieceEggs
- 150 gTomatoes
- 80 gFat-free fromage frais
- 10 gMustard
- 5 gFresh parsley
Method
- Boil the potatoes in salted water for 20 minutes and the eggs for 10. Cool them.
- Cube the potatoes, ham and tomatoes and quarter the eggs.
- Mix the fromage frais with the mustard and season.
- Gently fold everything with the dressing and sprinkle with parsley.
