Gazpacho
Use the ripest tomatoes, even slightly bruised ones: a gazpacho is exactly as good as its tomatoes.

Ingredients
- 1,000 gTomatoes
- 250 gCucumber
- 1 pieceBell peppers
- 1 pieceGarlic
- 30 mlOlive oil
- 20 mlCider vinegar
- 40 gBread
Method
- Roughly chop the tomatoes, peeled cucumber, pepper and garlic.
- Blend for a long time with the bread, vinegar, oil and a pinch of salt, until very smooth.
- Pass through a sieve for a velvety texture, then chill for at least 2 hours.
- Serve well chilled with a few cubes of cucumber.
