Warm squid, rocket and tomato salad
Two minutes over fierce heat or forty-five minutes low and slow: anything in between turns squid rubbery.

Ingredients
- 400 gSquid rings
- 80 gRocket
- 200 gTomatoes
- 2 pieceGarlic
- 1 pieceLemons
- 20 mlOlive oil
- 10 gFresh parsley
- 60 gWholemeal bread
Method
- Dry the squid rings carefully in a tea towel.
- Heat half the oil over very high heat and sear them for 2 minutes with the sliced garlic. Season with salt.
- Cut the tomatoes into wedges and toss with the rocket, the remaining oil and the lemon juice.
- Lay the hot squid over the salad, sprinkle with parsley and serve with the toast.
