White fish with celeriac mash

Mash the celeriac with a fork or potato masher, never a blender: it would turn gluey.

Ingredients

  • 350 gWhite fish
  • 600 gCeleriac
  • 100 mlMilk
  • 15 gButter
  • 10 gFresh parsley
  • 1 pieceLemons

Method

  1. Peel the celeriac, cut into cubes and boil in salted water for 20 minutes.
  2. Drain and mash with the hot milk and half the butter. Season.
  3. Cook the fish in a pan with the remaining butter for 3 to 4 minutes per side.
  4. Serve the fish on the mash with a squeeze of lemon and a sprinkle of parsley.
